Kashmiri Chai, also known as Noon Chai or Pink Tea, is a traditional, creamy tea that’s especially popular in Pakistan and Kashmir. Known for its beautiful pink color and rich, unique flavor, this tea is often enjoyed with nuts and a sprinkle of cardamom, making it a delightful treat for special occasions or chilly evenings.
Ingredients:
- 4 cups water
- 2 tablespoons Kashmiri tea leaves (or green tea leaves)
- 1/4 teaspoon baking soda
- 2-3 cardamom pods, crushed
- 1/4 teaspoon salt
- 1-2 cups milk (adjust to taste)
- 1-2 teaspoons sugar (optional, to taste)
- A handful of crushed pistachios and almonds for garnish
- A pinch of ground cardamom for extra flavor (optional)
Instructions:
- Brew the Tea: In a large saucepan, bring the water to a boil. Add the Kashmiri tea leaves and crushed cardamom pods. Allow it to simmer for 5-7 minutes.
- Add Baking Soda: Add the baking soda to the simmering tea and whisk vigorously. The tea will turn a reddish-brown color due to the reaction with the baking soda. Continue whisking until you see a deep pinkish-red hue.
- Slow Simmer: Reduce the heat and let the tea simmer on low for another 10 minutes. You can add a little cold water if needed to maintain the liquid level as it simmers.
- Add Milk and Salt: Pour in the milk and add salt. Stir well and let it cook for a few more minutes until you achieve a creamy, pink color.
- Sweeten (Optional): Add sugar to taste, if you prefer a sweet chai. Stir until dissolved.
- Serve and Garnish: Pour the tea into cups, and garnish with crushed pistachios, almonds, and a pinch of ground cardamom for extra flavor.
This warming and luxurious tea is perfect for enjoying with friends and family, especially during winter or on festive occasions. Serve alongside savory snacks or sweet treats for a true Kashmiri experience. Enjoy!
